Make your own wine.Come make wine in a fun, social atmosphere. We use only the finest juices from quality vineyards around the world so you can create your own special brand. We’ll guide you through the entire wine-making process during two separate visits and we take care of the wine for you in-between. Create your own unique flavor then impress your family and friends

Your wine will go through a 5 step process:

 

1. Primary Fermentation
The grape juice, fining agents, yeast and other additives such as oak are added to start the process. The wine will stay in the primary fermenter for approximately 5-7 days.

2. Secondary Fermentation
The wine is racked (transferred from one container to another sanitized container) into a glass carboy where it will sit for another 10 days to ferment.

3. Stabilizing and fining the wine
This step stops the fermentation process by adding potassium sorbet. Small amounts of metabisulfite are added at this time which assist in preserving your wine. Lastly, a fining agent is added to help the clearing process of the wine.

4. Racking
After 10 days, the wine will go through a second racking into another sanitized 6 gallon glass carboy. The importance behind this racking is to help clear your wine leaving behind extra sediment as the wine awaits the bottling process.

5. Filtering, bottling, corking and labeling the wine
Because we are a bonded winery, by law customers can only perform the first and last step of the wine making process.

First Visit (1 hour):
Sample some wines and select the varietal type you would like to make. There are over 29 varietal types to choose from. Start your batch with the assistance of Wine Necessities own wine makers. You will be given step by step instructions on the process of making wine, how to change the taste of your wine by adding different additives and how to use the wine making equipment. You will then mix the juice with yeast and other ingredients to start the fermentation process of your wine. Once complete, you will pick out your labels and color coordinate the shrink toppers to your labels. We will design the labels for you or you can design your own.

We then take care of the wine for you in between your visits.

Second Visit (2 hours):
You will return approximately 6-8 weeks later to filter, bottle, cork and dress your wine bottles with your own personalized labels and color coordinated shrink toppers. A 6 gallon batch of wine will yield approximately 25-27 (750 ml) size bottles of wine or 48 – 50 (375 ml) size bottles of wine. After bottling your wine, we recommend aging your white wines for at least one month and red wines for at least two months. This will smooth out any bit the wine may initially have and provide a nice smooth finish when you finally uncork your wine.

The price of each batch of wine includes the grape juice, bottles, corks, toppers and standard labels. Custom labels involving detailed artwork is available for an additional fee.
